Pineapple Stewed Chicken

Pineapple Stewed Chicken- Serves 10

Serving Size: 1 drumstick or thigh

Ingredients  :  10 chicken drumsticks or thighs (small size pieces) 2 teaspoons of chopped parsley 2 teaspoons of chopped small thyme leaves 4 tablespoons of pineapple juice for marinate 1 medium onion, diced 2 cloves garlic, finely minced 1 tablespoon oil (optional) 4 tablespoons of pineapple juice for stewing ¼ teaspoon of salt ¼ teaspoon of black pepper 1 cup of water

Steps :

Step 1
Clean and remove any visible skin and fat from chicken.

Step 2
Add chicken to a large bowl along with parsley, thyme and pineapple juice. Rub seasoning into chicken, cover and let marinate in the refrigerator for one to two hours (you can opt to marinate longer or overnight in the refrigerator).

Step 3
Heat oil in a large pot on medium heat and toss in onions and garlic. Let cook for 2 minutes.

Step 4
Add pineapple juice for stewing to pot and increase heat to high.

Step 5
Add the marinated chicken to the pot. Mix together and cook until meat is brown on both sides.

Step 6
Add remaining marinate from the chicken along with enough water to come up to the same level as the chicken (but not to cover it).

Step 7
Cover pot and bring it to a boil, when it comes to a boil reduce the heat to medium. Add in black pepper and salt. Slide the lid partially opening the pot and cook until the chicken is cooked through and the liquid has reduced to a sauce consistency you desire.
