Ingredients : 5 medium eggplants (melongene) 4 heads of garlic 3 sweet peppers (assorted colours) 2 large onions 2 lbs. tomatoes 2 bottles tomato paste 1 pineapple fresh or 2 tins canned 100% juice 1 lbs cheese (grated) ½ red cabbage Dried Herbs & Spices: Oregano, Italian, Paprika
Steps :
Step 1
Prepare pizza sauce by mixing together tomato paste, garlic, herbs and spice.
Step 2
Slice eggplant into quarter inch rounds and place on lightly oiled baking sheet.
Step 3
Prepare other vegetables and pineapple, cutting into small bitesize pieces. Reserve red cabbage for fresh garnish after pizza is baked.
Step 4
Assemble by placing 1-2 tbsp. of pizza sauce on each slice of eggplant, sprinkle with grated cheese, then add vegetables and pineapple cubes
Step 5
Bake in the oven at 350 oC for 15 minutes.
Step 6
Remove from the oven garnish with red cabbage and place in large cupcake holders.
