Sugar free Fruit Cake

Ingredients  :  ½ cup butter, cut into small pieces, plus extra for dusting 2 ½ cups all-purpose flour 2 tsp. baking powder 1 tsp. all spice 1/3 cup chopped cherries 2/3 cup raisins ½ cup milk 2 eggs, lightly beaten Zest of 1 orange 5 – 6 tbsp. freshly squeezed orange juice 3 tbsp. honey

Steps :

Step 1
Grease an 8 – inch round cake pan with a little butter and line the bottom with baking parchment.

Step 2
Sift the flour, baking powder and spice together in a large bowl. Add the butter and rub it in with your fingertips until the mixture resembles bread crumbs

Step 3
Carefully stir in the fruits, milk, eggs, zest and juice.

Step 4
Stir in the honey and mix together to form a soft dropping consistency. Spoon into the prepared pan and smooth the surface.

Step 5
Bake in a preheated oven, 350 °F/ 180°C, for 1hour until a toothpick inserted into the center of the cake comes out clean.

Step 6
Remove from the oven and allow to cool in the pan before turning out.
