Ingredients  :  1 cup sifted all-purpose flour 1 cup cornmeal ½ wheat bran 1 tbsp. baking powder ½ cup shredded cheddar cheese ¾ cup shredded carrots 1 cup of shredded spinach (fresh or frozen) 2 pimentos (finely chopped) 2 eggs 6 tbsp. soybean oil 1 cup of low fat milk 1 tsp. garlic powder 1 tsp mustard ¼ tsp. salt

Steps :

Step 1
Preheat oven 3500F /180oC

Step 2
Mix flour, cornmeal, baking powder, and salt in a large bowl.

Step 3
Add spinach, carrots, pimentos, garlic powder, mustard and cheese.

Step 4
In a separate bowl whisk together oil, eggs and milk.

Step 5
Combine dry and wet ingredients. Mix with spatula without over mixing.

Step 6
Using an ice cream scoop or spoon, divide into muffin tins.

Step 7
Place in oven for 20 to 25 minutes.
