Quinoa Salad

Ingredients : 3 cups cooked Quinoa 1 cup dried Chickpeas 1 cup chopped Cucumbers 1 cup Tomatoes 1/2 cup chopped Red or Yellow Bell Pepper 1/2 cup chopped Carrots 1/4 cup chopped Red Onion 1/4 cup chopped fresh Parsley 2 Tbsp. Olive oil 1/2 Tsp. Fresh Ground Pepper 1/4 Tsp. Salt 1/4 Tsp. grated Garlic
Steps :
Step 1
Rinse quinoa for 30 second and drain
Step 2
Boil rinsed quinoa for 20 minutes and drain
Step 3
Soak chickpeas overnight then add to a pan of water
Step 4
Boil until chickpeas are tender and drain
Step 5
Combine all remaining ingredients in a large bowl
Step 6
Mix well
Step 7
