An item most Trini’s enjoy preparing on a day out is Pelau, because its a “one pot” meal and it’s delicious!
Pelau – Makes about 8 servings

Ingredients : 2 tbsp tomato paste OR 2 tbsp roucou OR 2 tbsp lemon juice 1 large carrot (grated) 1 lb pumpkin (grated) 1 tin whole corn 1/2 cabbage (finely shredded) 2 tomatoes (diced) 2 pimentos (chopped finely) 2 tbsp green seasoning 1 pk low fat coconut milk 2 cups fresh or frozen pigeon peas 4 cups natural brown rice fresh celery & chive to garnish 4 cups of water 3 lbs seasoned chicken breast (no skin or fat)
Steps :
Step 1
Choose either tomato paste, roucou or lemon juice,
Step 2
add to hot pot and leave until golden brown,
Step 3
add chicken and leave to simmer until meat begins to stick to pot.
Step 4
Add washed rice, water and coconut milk, stir and leave to simmer for 10 mins. Then,
Step 5
add all vegetables and peas, flavor to taste. Try not to sir pot excessively at this point,
Step 6
add corn 15 mins before liquid soaks into rice.
Step 7
Garnish and place into a “to go” container. Time to LIME!
